Ingredients

  • 3 medium Carrots
  • 0.5 head Green cabbage
  • 0.25 head Red cabbage
  • 0.5 medium Red onion
  • 0.5 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Parsley

Directions

Step 1

Peel and shred the carrots using a box grater or food processor. Place the shredded carrots in a large mixing bowl.

Step 2

Finely shred the green cabbage and red cabbage, removing the hard core. Add the shredded cabbages to the mixing bowl.

Step 3

Thinly slice the red onion into slivers and add it to the bowl with the vegetables.

Step 4

In a separate smaller bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until smooth and creamy.

Step 5

Pour the dressing over the shredded vegetables and toss everything together until evenly coated.

Step 6

Chop the parsley finely and sprinkle it over the coleslaw. Give it a final toss to incorporate the parsley.

Step 7

Taste and adjust the seasoning with additional salt or pepper if needed.

Step 8

Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Step 9

Serve chilled as a refreshing side dish. Enjoy!
