Ingredients

  • 2 cups (grated) Carrots
  • 1 cup Fresh grated coconut
  • 1 cup Milk
  • 0.75 cup Sugar
  • 2 tablespoons Ghee
  • 0.5 teaspoons Cardamom powder
  • 2 tablespoons Chopped nuts (almonds, pistachios, or cashews)
  • 2 tablespoons Desiccated coconut
  • 0.25 cup Water

Directions

Step 1

Wash, peel, and grate the carrots to measure 2 cups.

Step 2

Heat 1 tablespoon of ghee in a large non-stick pan or heavy-bottomed skillet over medium heat.

Step 3

Add the grated carrots to the pan and sauté for 4-5 minutes until they slightly soften and release a light aroma.

Step 4

Pour in the milk and water, then stir well. Allow the mixture to cook on medium heat until the liquid reduces and the carrots are tender, stirring occasionally (about 8-10 minutes).

Step 5

Add the fresh grated coconut to the pan and mix thoroughly. Cook for another 5 minutes to combine the flavors.

Stir in the sugar and continue cooking. The sugar will melt and make the mixture slightly liquid again. Cook on medium-low heat, stirring frequently, until the mixture thickens and starts coming together.
