Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 1 cup Splenda Granulated (or similar sweetener)
  • 4 large eggs
  • 0.75 cup vegetable oil
  • 0.5 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour a 9x13-inch baking pan or two 8-inch round pans.

Step 2

In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, beat the eggs on medium speed until well combined. Add the vegetable oil, applesauce, and vanilla extract, and mix until smooth.

Step 4

Gradually add the Splenda to the wet ingredients, mixing until fully incorporated.

Step 5

Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.

Step 6

Fold in the grated carrots and optional walnuts using a spatula until evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared pan(s), smoothing the top with the back of a spoon or spatula.

Step 8

Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before frosting or serving.
