  • 0.5 cup Unsweetened applesauce
  • 2 teaspoons Vanilla extract
  • 2 cups Finely grated carrots
  • 0.5 cup Chopped walnuts or pecans (optional)
  • 0.25 cup Unsweetened shredded coconut (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8-inch round cake pan with parchment paper or lightly grease it with coconut oil.
