  • 1 box Boxed spice cake mix
  • 2 cups Grated carrots
  • 0.75 cups Vegetable oil
  • 4 large Eggs
  • 0.5 cups Crushed pineapple (drained)
  • 0.5 cups Finely chopped walnuts or pecans (optional)
  • 1 teaspoon Cinnamon
  • 1 container Cream cheese frosting (store-bought or homemade)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Step 2

In a large mixing bowl, combine the spice cake mix, grated carrots, vegetable oil, eggs, drained crushed pineapple, optional nuts, and cinnamon.

Step 3

Using a hand mixer or a whisk, mix until all ingredients are well combined and no lumps remain. Be careful not to overmix.

Divide the batter evenly between the prepared cake pans.
