Wash, peel, and grate the carrots. Measure 500 grams of grated carrots and set aside.
In a heavy-bottomed pan, heat 2 tablespoons of ghee over medium heat.
Add the grated carrots and sauté for 5-7 minutes until they soften and release a light fragrance.
Pour in the milk and bring the mixture to a gentle boil. Reduce the heat and cook while stirring frequently to prevent sticking.
Continue cooking until the milk reduces and thickens, and the mixture becomes creamy. This process may take around 15-20 minutes.
Stir in the sugar and mix well. Cook for another 10 minutes until the sugar dissolves completely, and the mixture begins to pull away from the sides of the pan.
Add the remaining 2 tablespoons of ghee and mix thoroughly. Continue stirring to give the burfi a glossy texture.
Sprinkle in the cardamom powder and mix. Add the chopped nuts and desiccated coconut (if using), reserving a small portion of nuts for garnish.
Once the mixture thickens and forms a dough-like consistency, remove it from the heat.

Garnish the top with the reserved chopped nuts, pressing them gently to stick.
Allow the mixture to cool completely at room temperature or in the refrigerator for at least 1-2 hours to set.
