Ingredients

  • 2 medium Carrots
  • 1 cup Rolled oats (gluten-free)
  • 8 pieces Medjool dates, pitted
  • 0.5 cup Unsweetened shredded coconut
  • 1 tablespoon Chia seeds
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 1 tablespoon Maple syrup (optional)
  • 1 teaspoon Vanilla extract
  • 1 pinch Pinch of salt

Directions

Step 1

Peel and grate the carrots using a fine grater or a food processor with a grating attachment, yielding about 1 cup of grated carrots.

Step 2

Add the rolled oats to a food processor and pulse a few times until they form a coarse flour-like texture.

Step 3

Add the grated carrots, pitted dates, shredded coconut, chia seeds, ground cinnamon, ground ginger, maple syrup (if using), vanilla extract, and a pinch of salt to the food processor.

Step 4

Pulse the mixture until well combined and it starts to stick together. Stop occasionally to scrape down the sides of the food processor to ensure even mixing.

Step 5

Test the mixture by pressing a small amount between your fingers. If it holds together, it’s ready to shape. If it’s too dry, add a small amount of water (1 teaspoon at a time) and pulse again.
