Ingredients

  • 2 medium (grated) Carrots
  • 1.5 cups Cooked white beans (cannellini or navy beans)
  • 2 tablespoons (chopped) Fresh parsley
  • 2 cloves (minced) Garlic
  • 1 cup Breadcrumbs
  • 1 teaspoon Ground cumin
  • 0.5 teaspoons Paprika
  • 0.75 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 3 tablespoons (divided) Olive oil
  • 0.5 cup All-purpose flour
  • 0.25 cup Plant-based milk (or regular milk)
  • 0.5 cup (for coating) Additional breadcrumbs

Directions

Step 1

Grate the carrots and set them aside. If they are very moist, squeeze out some excess liquid using a clean kitchen towel.

Step 2

Mash the cooked white beans in a large bowl using a fork or potato masher until mostly broken down but still a bit chunky.

Step 3

Add the grated carrots, parsley, minced garlic, 1 cup of breadcrumbs, cumin, paprika, salt, and black pepper to the mashed beans. Stir well to combine.

Using your hands, form the mixture into small oval shapes (about 2 inches long) to create croquettes. You should have around 12-14 pieces.

Set up a coating station: Place the flour in one shallow dish, the milk in a second dish, and the additional breadcrumbs in a third dish.
