  • 0.5 cup brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt

  • 2 cups powdered sugar
  • 1 tablespoon milk

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper.

In a separate bowl, beat together the vegetable oil, eggs, and pure vanilla extract until well combined.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Step 5

Fold in the grated carrots gently until evenly distributed throughout the batter.

Step 6

Pour the batter into the prepared baking pan and spread it evenly with a spatula.

Step 7

Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the carrot bars from the oven and let them cool completely in the pan.

Step 9

While the bars cool, make the frosting by beating the cream cheese and softened butter together in a medium bowl until smooth and creamy.
