Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 0.5 cups granulated sugar
  • 0.5 cups brown sugar, packed
  • 0.75 cups unsweetened applesauce
  • 0.25 cups vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups carrots, finely shredded
  • 0.75 cups crushed pineapple, drained
  • 0.5 cups chopped walnuts (optional)
  • 0.5 cups raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and prepare a standard 12-cup muffin tin by lining it with paper liners or greasing it lightly.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

In a separate medium-sized bowl, combine the granulated sugar, brown sugar, unsweetened applesauce, vegetable oil, eggs, and vanilla extract. Mix until smooth and creamy.
