Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 2 large garlic cloves
  • 1 tablespoon fresh ginger
  • 5 medium carrots
  • 1 large apple
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon maple syrup (optional, for extra sweetness)

Directions

Step 1

Peel and dice the onion, garlic, ginger, carrots, and apple into small, even-sized pieces for even cooking.

Step 2

Heat the olive oil in a large pot over medium heat.

Step 3

Add the diced onion, garlic, and ginger to the pot. Sauté for 3-4 minutes until softened and fragrant.

Step 4

Stir in the curry powder and turmeric, and cook for 1-2 minutes to bloom the spices.

Step 5

Add the diced carrots and apple to the pot, then pour in the vegetable broth. Stir everything together.

Step 6

Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 20-25 minutes until the carrots are fork-tender.

Step 7

Remove the pot from heat and let it cool slightly before blending.

Step 8

Use an immersion blender to blend the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a high-speed blender and puree, then return it to the pot.

Step 9

Stir in the coconut milk, salt, pepper, and maple syrup (if using). Adjust seasonings to taste.

Step 10

Reheat the soup gently over low heat if necessary, then serve warm. Optionally, garnish with fresh herbs, a swirl of coconut milk, or a sprinkle of chopped nuts.
