Ingredients

  • 2 tablespoons olive oil
  • 1 medium, diced onion
  • 2 minced garlic cloves
  • 4 medium, peeled and chopped carrots
  • 1 large, peeled, cored, and chopped apple
  • 3 chopped celery stalks
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped, for garnish fresh parsley
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent and fragrant.

Stir in the chopped carrots, apple, and celery. Cook for 5 minutes, stirring occasionally.

Add the vegetable broth, ground cumin, ground coriander, salt, and black pepper. Stir to combine.
