Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup, packed brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.75 cup vegetable oil
  • 0.5 cup unsweetened applesauce
  • 3 pieces large eggs
  • 2 teaspoons vanilla extract
  • 2 cups grated carrots
  • 1 cup peeled and grated apples
  • 0.75 cup chopped walnuts or pecans (optional)
  • 8 ounces cream cheese
  • 0.5 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 3

In a separate medium bowl, combine the vegetable oil, applesauce, eggs, and vanilla extract. Whisk until well mixed.

Step 4

Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Step 5

Fold in the grated carrots, grated apples, and chopped nuts (if using) until evenly distributed.

Step 6

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 7

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center of the cakes comes out clean.

Step 8

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer the cakes to a wire rack to cool completely.

Step 9

To make the cream cheese frosting, beat the cream cheese and softened butter together in a large bowl until smooth and creamy.

Step 10

Gradually add the powdered sugar, one cup at a time, beating at low speed until fully incorporated.

Step 11

Add the vanilla extract and milk, and beat until the frosting reaches a spreadable consistency. If needed, add more milk, one teaspoon at a time.

Step 12

Once the cakes are completely cooled, place one layer on a serving plate and spread a generous amount of frosting on top. Place the second cake layer on top and frost the top and sides of the cake.

Step 13

Decorate the cake as desired, optionally garnishing with additional nuts, grated carrots, or a dusting of cinnamon.

Step 14

Slice and serve your delicious Carrot Apple Cake. Enjoy!
