Ingredients

  • 3 medium carrots
  • 2 cups butternut squash
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 tablespoon ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame seeds
  • 2 stalks scallions
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the carrots and cut them into thin matchstick-sized strips.

Step 2

Peel the butternut squash and dice it into small bite-sized cubes.

Step 3

Slice the yellow onion thinly and set it aside.

Step 4

Mince the garlic and grate the ginger, then combine them in a small bowl.

Step 5

Thinly slice the scallions and set them aside for garnish.

Step 6

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the sliced onion to the skillet, stirring frequently for 2-3 minutes until softened and translucent.
