Ingredients

  • 3 medium carrots
  • 6 pieces radishes
  • 2 tablespoons fresh parsley
  • 2 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the carrots and use a box grater or julienne peeler to shred them into thin strips. Place them into a large mixing bowl.

Step 2

Rinse and trim the radishes, then slice them thinly using a sharp knife or mandoline slicer. Add the radish slices to the bowl with the carrots.

Step 3

Finely chop the fresh parsley and sprinkle it over the carrots and radishes in the bowl.

Step 4

In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and black pepper to create the vinaigrette dressing.

Step 5

Pour the vinaigrette over the carrot and radish mixture and toss everything together thoroughly to ensure all the vegetables are coated.

Step 6

Taste the salad and adjust the seasoning with a pinch more salt or pepper if needed.

Step 7

Let the salad rest for 5 minutes to allow the flavors to meld. Serve immediately or chill in the refrigerator until ready to eat.
