Ingredients

  • 2 tablespoons olive oil
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 4 medium, peeled and chopped carrots
  • 1 cup red lentils
  • 5 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon paprika
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons, chopped (for garnish) fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 5 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the chopped carrots to the pot and sauté for 3 minutes.

Step 5

Rinse the red lentils under cold water and add them to the pot.

Step 6

Pour in the vegetable broth and stir well.

Step 7

Add the ground cumin, ground coriander, paprika, salt, and black pepper to the mixture.

Step 8

Bring the soup to a boil over high heat, then reduce the heat to low, cover, and simmer for 20–25 minutes, or until the carrots and lentils are tender.

Step 9

Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a blender, puree, and return it to the pot.

Stir in the lemon juice and adjust seasonings as needed.

Step 11

Ladle the soup into bowls, garnish with freshly chopped parsley, and serve warm.
