Ingredients

  • 4 medium carrots
  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups milk
  • 2 cups sharp cheddar cheese, shredded
  • 0.5 cups parmesan cheese, grated
  • 1 teaspoons garlic powder
  • 1 teaspoons onion powder
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 cups panko breadcrumbs
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set it aside.

Step 2

Peel and grate the carrots, then set them aside. You should have approximately 2 cups of grated carrots.

In a medium saucepan over medium heat, bring the broth to a boil. Stir in the rice, reduce the heat to low, cover, and simmer until the rice is tender and the broth is absorbed (about 15 minutes). Remove from heat and set aside.
