  • 4 large carrots
  • 1 large onion

  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup coconut milk

  • 0.25 teaspoons ground nutmeg
  • 1 teaspoons (adjust to taste) salt
  • 0.5 teaspoons black pepper
  • 2 sprigs (optional, for garnish) fresh thyme
  • 2 tablespoons (optional, for garnish) pumpkin seeds

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Peel and dice the butternut squash into 1-inch cubes. Peel and slice the carrots into thick rounds.

Place the squash and carrots on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and season with a pinch of salt and pepper. Toss to coat evenly.
