Ingredients

  • 4 medium Carrots
  • 2 medium Apples (Granny Smith or Honeycrisp)
  • 2 tablespoons, chopped Fresh parsley
  • 1 stalk, finely sliced Green onion
  • 2 tablespoons Lime juice
  • 1 tablespoon Honey
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

1. Wash and peel the carrots. Using a box grater or food processor with a shredding blade, shred the carrots into thin strips and place them in a large mixing bowl.

2. Core and slice the apples into thin matchsticks, leaving the peel on for extra color and texture. Add the apple slices to the bowl with the carrots.
