Ingredients

  • 2 pounds ground beef
  • 1 large onion
  • 3 pieces garlic cloves
  • 1 large green bell pepper
  • 6 ounces tomato paste
  • 14.5 ounces diced tomatoes (canned)
  • 1 cup beef broth
  • 15 ounces pinto beans (optional)
  • 1 package Carroll Shelby’s chili seasoning kit
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.25 teaspoons cayenne pepper (optional, for extra heat)
  • 2 tablespoons vegetable oil
  • 1 cup water

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add the vegetable oil.

Step 2

Dice the onion, green bell pepper, and garlic. Add them to the pot and sauté for 3-5 minutes until softened.

Step 3

Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned, about 8-10 minutes. Drain any excess grease if needed.

Step 4

Stir in the tomato paste and cook for 1-2 minutes to develop the flavors.

Step 5

Add the canned diced tomatoes, beef broth, and 1 cup of water to the pot. Stir to combine.

Step 6

Open the Carroll Shelby’s chili seasoning kit and add the chili spice mix and salt packet. Add the cayenne pepper if desired for extra heat.

Step 7

Stir everything together, lower the heat, and let the chili simmer uncovered for 45 minutes, stirring occasionally.

Step 8

If using pinto beans, drain and rinse them. Add to the pot during the last 15 minutes of cooking.

Step 9

Taste the chili and adjust seasoning with additional salt or black pepper if needed.

Step 10

Serve hot with your choice of toppings such as shredded cheese, sour cream, chopped green onions, or crackers.
