Ingredients

  • 2.5 pounds beef chuck roast
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 3 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 4 medium carrots, peeled and sliced
  • 3 large russet potatoes, peeled and cubed
  • 3 stalks celery stalks, sliced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 0.5 cup red wine (optional)
  • 2 leaves bay leaves
  • 1 teaspoon dried thyme
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Trim any excess fat from the beef chuck roast and cut it into 1.5-inch cubes.

Step 2

Season the beef with salt and black pepper, then toss the pieces in the all-purpose flour to lightly coat.

Step 3

In a large, heavy-bottomed pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add half of the beef cubes and sear until browned on all sides, about 4-5 minutes per batch. Remove the beef and set aside. Repeat with the remaining beef, adding more oil if needed.

Step 4

Reduce heat to medium and add the remaining tablespoon of olive oil to the pot. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for 1 minute until fragrant.

Remove the lid and stir in the frozen peas. Simmer for an additional 5 minutes to heat the peas through.

Taste the stew and adjust the seasoning with additional salt and pepper if needed. Discard the bay leaves.
