  • 0.5 cup red bell pepper, diced
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup slivered almonds, toasted
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a medium heatproof bowl, combine the couscous with the boiling water or vegetable stock. Cover tightly with a lid or plastic wrap and let it sit for 5 minutes to absorb the liquid.
