Ingredients

  • 12 oz Tagliarini pasta (or fresh fettuccine)
  • 4 cups Fresh tomatoes, diced
  • 4 cloves Garlic, minced
  • 0.25 cup Extra-virgin olive oil
  • 0.25 cup Fresh basil leaves, chopped
  • 1 tsp Salt
  • 0.25 tsp Crushed red pepper flakes
  • 0.25 cup Freshly grated Parmesan cheese (optional)
  • 4 quarts Water (for boiling pasta)

Directions

Step 1

Bring a large pot of salted water to a boil (using approximately 1 tablespoon of salt for 4 quarts of water).

Step 2

Add the tagliarini pasta to the boiling water and cook according to the package directions, or until al dente. Reserve 1/2 cup of pasta water before draining.

Step 3

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 4

Add the minced garlic to the skillet and sauté for about 1-2 minutes, or until fragrant and lightly golden. Be careful not to burn the garlic.

Step 5

Add the diced tomatoes to the skillet and stir to combine. Let the mixture simmer for 5-7 minutes, stirring occasionally, until the tomatoes start to break down and form a light sauce.

Step 6

Season the sauce with salt and crushed red pepper flakes, adjusting to taste.

Step 7

Add the chopped basil to the sauce and stir gently to incorporate.

Step 8

Add the drained pasta to the skillet and toss to coat the noodles in the sauce. If needed, add a small amount of reserved pasta water to loosen the sauce and help it cling to the pasta.

Step 9

Serve the Tagliarini Picchi Pacchiu immediately, garnishing each plate with freshly grated Parmesan cheese (if desired) and a drizzle of olive oil for extra flavor.
