Ingredients

  • 16 pieces Large shrimp, peeled and deveined
  • 16 pieces Sea scallops
  • 1 cup Italian-style breadcrumbs
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 2 tablespoons Water
  • 3 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 2 cloves Garlic, finely minced
  • 0.5 cup Dry white wine
  • 3 tablespoons Fresh lemon juice
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 8 pieces Wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.

Step 2

Preheat a large skillet or grill pan over medium heat.

Step 3

Pat shrimp and scallops dry with paper towels. Lightly season with salt and black pepper.

Step 4

Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs and water, and one with Italian-style breadcrumbs.

Step 5

Dredge each shrimp and scallop first in flour, then in the egg mixture, and finally in breadcrumbs, pressing gently to ensure a good coating.

Step 6

Thread shrimp and scallops alternately onto the skewers, arranging four pieces per skewer.

Step 7

Heat olive oil in the preheated skillet. Place the skewers in the skillet and cook for 2-3 minutes per side, until golden brown and cooked through. Remove the skewers and keep warm.

Step 8

In the same skillet, reduce the heat to medium-low and add butter. Once melted, add minced garlic and cook for 1 minute until fragrant.

Step 9

Deglaze the skillet with dry white wine, scraping up any browned bits from the bottom. Let simmer for 2 minutes, reducing slightly.

Step 10

Stir in lemon juice, chopped parsley, and a pinch of salt and pepper. Stir well and simmer for another minute.

Step 11

Drizzle the lemon butter sauce generously over the cooked skewers.

Step 12

Serve immediately with your choice of side dishes such as angel hair pasta or grilled vegetables.
