Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 3 Garlic cloves, minced
  • 1 can (28 ounces) Crushed tomatoes
  • 6 cups Chicken broth
  • 1 cup Dried lentils, rinsed and drained
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned and fully cooked, about 5-7 minutes. Remove the sausage from the pot and set aside, leaving the drippings in the pot.

Add the diced onion, carrots, and celery to the pot. Cook for 5-7 minutes until the vegetables are softened.
