  • 12 oz Pappardelle pasta
  • 8 oz Sweet Italian sausage
  • 2 tbsp Olive oil
  • 3 cloves Garlic cloves, minced
  • 0.5 tsp Crushed red pepper flakes
  • 2 cups Cherry tomatoes, halved
  • 1.5 cups Cremini mushrooms, sliced
  • 1 cup Heavy cream
  • 0.75 cup Grated Parmesan cheese
  • 0.25 cup Fresh basil leaves, chopped
  • 1 tsp Salt
  • 0.5 tsp Freshly ground black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pappardelle pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

Step 2

Heat a large skillet over medium heat. Add 1 tablespoon of olive oil, then crumble the sweet Italian sausage into the pan. Cook for 5–7 minutes, stirring occasionally, until browned and cooked through. Remove the sausage and set it aside on a plate lined with paper towels.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic and crushed red pepper flakes for about 30 seconds, or until fragrant.

Step 4

Add the cherry tomatoes and sliced cremini mushrooms to the skillet. Cook for 5 minutes, stirring occasionally, until the tomatoes soften and the mushrooms release their liquid.

Step 5

Pour in the heavy cream and stir to combine. Let the mixture simmer for 2–3 minutes to slightly thicken. Stir in the grated Parmesan cheese until smooth.

Step 6

Return the cooked sausage to the skillet. Add the drained pappardelle pasta and toss to combine. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.

Step 7

Season the dish with salt and freshly ground black pepper to taste. Remove the skillet from heat and garnish the pasta with chopped fresh basil.

Step 8

Serve immediately, with additional grated Parmesan cheese on the side, if desired.
