Ingredients

  • 2 lbs Chicken thighs (bone-in, skin removed)
  • 2 cups Carrots, diced
  • 2 cups Celery, diced
  • 1 large Yellow onion, finely chopped
  • 4 cloves Garlic cloves, minced
  • 2 medium Russet potatoes, peeled and cubed
  • 3 large Plum tomatoes, diced
  • 12 cups Chicken stock
  • 0.5 cup Fresh parsley, chopped
  • 0.25 cup Fresh basil leaves, chopped
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 cup Ditalini pasta (optional)

Directions

Step 1

Heat the olive oil in a large stockpot over medium heat.

Step 2

Add the diced onions, carrots, and celery to the pot. Sauté for 5-7 minutes until the vegetables are softened.

Step 3

Mix in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Place the chicken thighs into the pot and pour in the chicken stock, ensuring the chicken is fully submerged.

Step 5

Bring the mixture to a boil, then reduce the heat to low and simmer for 45 minutes, skimming any foam that rises to the top.

Step 6

Remove the chicken thighs from the pot and set aside to cool slightly. Shred the meat, discarding the bones, and return the shredded chicken to the pot.

Step 7

Add the diced potatoes, tomatoes, salt, and black pepper to the pot. Simmer for another 25 minutes, stirring occasionally.

Step 8

If using ditalini pasta, cook it separately according to the package instructions. Drain and add it to the soup during the final 5 minutes of cooking.

Step 9

Stir in the fresh parsley and basil just before serving.

Step 10

Taste and adjust the seasoning with additional salt or pepper if needed.

Step 11

Serve hot with crusty bread or a sprinkle of grated Parmesan, if desired.
