Ingredients

  • 12 pieces Baby bella mushrooms (large-sized, stems removed)
  • 2 tablespoons Olive oil
  • 1 cup Fresh breadcrumbs
  • 0.5 cup Parmesan cheese (grated)
  • 0.5 cup Mozzarella cheese (shredded)
  • 2 tablespoons Fresh parsley (chopped)
  • 3 cloves Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Butter (melted)
  • 0.5 cup Marinara sauce
  • 1 tablespoon Fresh basil leaves (chopped, optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the mushrooms with a damp paper towel and carefully remove the stems, setting the mushroom caps aside.

Step 3

Chop the mushroom stems finely and set them aside.

Step 4

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushroom stems and cook for 3-4 minutes until softened.

Step 5

Add the minced garlic to the skillet and sauté for 1 minute, until fragrant.

Step 6

In a mixing bowl, combine the cooked mushroom stems and garlic with breadcrumbs, Parmesan cheese, 1/4 cup of mozzarella cheese, parsley, salt, black pepper, and melted butter. Mix thoroughly to create the stuffing.

Step 7

Brush the mushroom caps lightly with the remaining 1 tablespoon of olive oil and place them on a baking sheet, gill side up.

Step 8

Spoon the stuffing mixture generously into each mushroom cap, pressing it down lightly to pack it in.

Step 9

Top each stuffed mushroom with the remaining shredded mozzarella cheese.

Step 10

Bake the stuffed mushrooms in the preheated oven for 15-18 minutes, until the mushrooms are tender and the cheese on top is melted and golden brown.

Step 11

While the mushrooms are baking, warm the marinara sauce in a small saucepan over low heat.

Step 12

Once the mushrooms are done, transfer them to a serving plate and drizzle the marinara sauce over each mushroom or serve the sauce on the side for dipping.

Step 13

Garnish with fresh basil if desired and serve immediately.
