Ingredients

  • 4 pieces Italian sausage links (mild or spicy)

  • 3 tablespoons Olive oil
  • 14 ounces Canned crushed tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Red pepper flakes (optional, for heat)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)
  • 0 Crusty bread or cooked pasta (optional, for serving)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the Italian sausage links to the skillet and cook for 6-8 minutes, turning occasionally, until browned on all sides. The sausages do not need to be fully cooked at this stage. Remove them from the skillet and set aside.

In the same skillet, add the remaining 2 tablespoons of olive oil. Add the sliced red and green bell peppers, along with the sliced onion. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
