Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cups All-purpose flour
  • 1 teaspoon Kosher salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 8 ounces Cremini or white mushrooms (sliced)
  • 2 cloves Garlic (minced)
  • 0.75 cups Dry Marsala wine
  • 0.5 cups Chicken broth
  • 0.25 cups Heavy cream
  • 2 tablespoons Chopped parsley

Directions

Step 1

Trim the chicken breasts if needed and pound them to an even thickness of about 1/2 inch for even cooking.

Step 2

In a shallow bowl, mix together the flour, kosher salt, and black pepper. Dredge each chicken breast in the seasoned flour, shaking off any excess.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the chicken breasts in batches, cooking for 3-4 minutes per side or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

Step 4

In the same skillet, reduce the heat to medium-low and add the unsalted butter. Once melted, add the sliced mushrooms and sauté for 5-7 minutes, stirring occasionally, until softened and slightly browned.

Step 5

Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 6

Deglaze the pan by pouring in the dry Marsala wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to simmer and reduce by half, about 3-4 minutes.

Step 7

Stir in the chicken broth and heavy cream. Let the sauce simmer for 2-3 minutes until it thickens slightly.

Step 8

Return the cooked chicken breasts to the skillet, spooning some of the sauce over them. Cook for an additional 2 minutes to warm the chicken through.

Step 9

Garnish with chopped fresh parsley and serve hot over pasta, mashed potatoes, or with a side of vegetables.
