Ingredients

  • 12 ounces Cavatappi pasta
  • 6 slices Thick-cut bacon
  • 2 tablespoons Olive oil
  • 1 medium, finely diced Yellow onion
  • 3 minced Garlic cloves
  • 0.5 teaspoons Crushed red pepper flakes
  • 28 ounces Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoons Sugar
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups, grated Parmesan cheese
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Cook the cavatappi pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

Step 2

Slice the bacon into small pieces. In a large skillet or saucepan, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and place on a paper towel-lined plate. Leave about 1 tablespoon of bacon grease in the skillet.

Step 3

Add olive oil to the skillet with the bacon grease and heat over medium heat. Stir in the diced onion and cook for about 3-4 minutes, until softened and translucent.

Step 4

Add the minced garlic and crushed red pepper flakes to the skillet. Cook for 30 seconds, stirring frequently, until fragrant.

Step 5

Pour in the canned crushed tomatoes and stir in the tomato paste, sugar, salt, and black pepper. Cook for 10 minutes over medium-low heat, stirring occasionally, to allow the flavors to meld.

Step 6

Stir the cooked bacon back into the tomato sauce. Taste and adjust seasoning as needed.

Step 7

Add the drained cavatappi pasta to the skillet with the sauce, tossing to coat the pasta evenly.

Step 8

Remove the skillet from heat and stir in the grated Parmesan cheese.

Step 9

Garnish with chopped fresh parsley before serving. Serve warm as a side dish or as a light main course.
