Ingredients

  • 4 cups cooked jasmine rice
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 cup chicken breast, diced
  • 1 cup frozen peas and carrots mix
  • 2 stalks green onions, finely sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 0.5 teaspoon red chili flakes (optional)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Prepare all ingredients before starting: dice the chicken, mince the garlic and ginger, slice the green onions, and measure out the sauces and seasonings.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the diced chicken to the pan. Sprinkle with salt and black pepper, and cook for 4-5 minutes, stirring frequently, until the chicken is cooked through and lightly browned. Remove from the skillet and set aside.
