Ingredients

  • 500 grams ground beef
  • 250 grams ground pork
  • 100 grams breadcrumbs
  • 60 milliliters milk
  • 1 large egg
  • 50 grams Parmesan cheese
  • 2 cloves garlic
  • 15 grams fresh parsley
  • 1 teaspoon lemon zest
  • 120 milliliters lemon juice
  • 500 milliliters chicken broth
  • 30 grams unsalted butter
  • 2 tablespoons olive oil
  • 10 grams all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, Parmesan cheese, minced garlic, chopped parsley, lemon zest, salt, and black pepper. Mix until well incorporated but do not overmix.

Step 2

Form the meat mixture into small, golf ball-sized meatballs and place them on a tray or plate. You should have about 20-25 meatballs.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches, browning them on all sides. Remove the meatballs from the skillet and set aside. They do not need to be fully cooked at this stage.

Step 4

In the same skillet, melt the butter over medium heat. Sprinkle in the flour and whisk constantly for about 1 minute to create a roux.

Step 5

Slowly pour in the chicken broth, whisking constantly to prevent lumps. Add the lemon juice and stir to combine.

Step 6

Bring the sauce to a gentle simmer and return the browned meatballs to the skillet. Cover and cook for 15-20 minutes, or until the meatballs are fully cooked through and the sauce has slightly thickened.

Step 7

Taste the sauce and adjust seasoning with additional salt or black pepper if needed.

Step 8

Serve the meatballs warm, spooned over rice, pasta, or alongside crusty bread to soak up the flavorful lemon sauce.
