Ingredients

  • 2 cups (diced) cooked ham
  • 1 large (diced) yellow onion
  • 3 medium (sliced) carrots
  • 2 stalks (sliced) celery stalks
  • 4 medium (cubed) golden potatoes
  • 2 cloves (minced) garlic
  • 4 cups unsalted chicken stock
  • 1 bay leaf
  • 1 teaspoon (dried) thyme
  • 2 tablespoons (chopped, fresh) parsley
  • 0.5 teaspoons salt
  • 0.5 teaspoons (freshly ground) black pepper
  • 2 tablespoons olive oil
  • 1 cup frozen peas

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add olive oil and let it warm up.

Step 2

Add the diced onion, sliced carrots, and sliced celery to the pot. Sauté for 5-7 minutes, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Step 4

Add the diced ham and cook for 2-3 minutes, stirring occasionally.

Step 5

Add the cubed potatoes, chicken stock, bay leaf, dried thyme, salt, and black pepper to the pot. Stir to combine and bring to a gentle boil.

Step 6

Lower the heat to a simmer, cover partially with a lid, and let it cook for 25-30 minutes, or until the potatoes are tender.

Step 7

Remove the bay leaf from the pot and stir in the frozen peas. Simmer for an additional 5 minutes.

Step 8

Taste and adjust seasoning with more salt and pepper, if needed.

Step 9

Garnish the stew with chopped fresh parsley just before serving.

Step 10

Serve hot in bowls with a slice of crusty bread on the side for dipping, if desired.
