Ingredients

  • 2 large (boneless, skinless) chicken breast
  • 2 tablespoons unsalted butter
  • 1 medium, diced yellow onion
  • 2 medium, peeled and sliced carrots
  • 2 thinly sliced celery stalks
  • 6 cups chicken broth
  • 1 cup whole milk
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1.5 teaspoons (divided) salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons (chopped, optional for garnish) fresh parsley
  • 1.5 cups self-rising flour
  • 0.75 cup buttermilk

Directions

Step 1

Cut the chicken breasts into bite-sized chunks.

Step 2

In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion, carrots, and celery, and sauté for 5–7 minutes until the vegetables are softened.

Step 3

Add the chicken pieces to the pot and sprinkle with 1 teaspoon of salt and the black pepper. Cook for 5 minutes, stirring occasionally, until the chicken begins to brown slightly.

Step 4

Pour in the chicken broth, bring to a boil, then reduce to a simmer. Let cook for 10 minutes to fully cook the chicken.

Step 5

While the broth is simmering, prepare the dumpling dough. In a medium bowl, whisk together the self-rising flour, baking powder, and 0.5 teaspoon of salt. Add the buttermilk and stir until a soft dough forms. Set aside.

Step 6

In a small bowl, whisk the all-purpose flour with the milk until smooth. Slowly whisk this mixture into the simmering broth to thicken it. Let the broth simmer for another 2–3 minutes until it has a creamy consistency.

Step 7

Using a tablespoon or small cookie scoop, drop spoonfuls of the dumpling dough into the simmering broth. Cover the pot with a lid and let the dumplings cook undisturbed for 10 minutes. They should puff up and cook through.

Step 8

Remove the pot from heat and sprinkle with fresh parsley, if desired. Serve immediately, ladling the chicken, dumplings, and creamy broth into bowls.
