Ingredients

  • 4 pounds Pork shoulder (Boston butt)
  • 2 tablespoons Yellow mustard
  • 2 tablespoons Brown sugar
  • 1 tablespoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Apple cider vinegar
  • 1 teaspoon Red pepper flakes
  • 4 cups Coleslaw mix
  • 1 cup Mayonnaise
  • 2 tablespoons White vinegar
  • 1 tablespoon Sugar
  • 6 pieces Hamburger buns

Directions

Step 1

Trim excess fat from the pork shoulder and pat it dry.

Step 2

Rub the pork shoulder with the yellow mustard to create a sticky surface for the spice rub.

Step 3

In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture generously all over the pork shoulder.

Step 4

Place the seasoned pork shoulder in a slow cooker. Add apple cider vinegar and sprinkle with red pepper flakes.

Step 5

Cover and cook on low for 8 hours or until the pork is tender and easily pulls apart with a fork.

Step 6

While the pork is cooking, prepare the coleslaw. In a large bowl, combine the coleslaw mix, mayonnaise, white vinegar, and sugar. Toss well to coat evenly. Cover and refrigerate until serving.

Step 7

When the pork is done, remove it from the slow cooker and shred it using two forks. Skim off any excess fat from the cooking liquid and return the shredded pork to the liquid to keep it moist and flavorful.

Step 8

Toast the hamburger buns lightly to prevent them from getting soggy.

Step 9

Assemble the sandwiches by piling shredded pork onto the bottom half of each bun, topping it with coleslaw, and adding the top bun.

Step 10

Serve immediately and enjoy your delicious Carolina Style Pulled Pork Sandwich!
