Ingredients

  • 2 lbs Chicken breasts (boneless, skinless)
  • 1 cup Yellow mustard
  • 1 cup Apple cider vinegar
  • 1 tbsp Brown sugar
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Honey
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Chicken broth
  • 6 pieces Hamburger buns (optional, for serving)
  • 2 cups Coleslaw (optional, for topping)

Directions

Step 1

In a medium-sized bowl, prepare the Carolina-style barbecue sauce by whisking together yellow mustard, apple cider vinegar, brown sugar, Worcestershire sauce, honey, smoked paprika, garlic powder, onion powder, salt, and black pepper until smooth.

Step 2

Place the chicken breasts in a slow cooker and pour the chicken broth over them to keep them moist during cooking.

Step 3

Pour about 2/3 of the prepared barbecue sauce over the chicken in the slow cooker, reserving the remaining sauce for later.

Step 4

Cover the slow cooker with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded with a fork.

Step 5

Once the chicken is fully cooked, remove it from the slow cooker and place it on a cutting board. Use two forks to shred the chicken into thin, bite-sized pieces.

Step 6

Return the shredded chicken to the slow cooker and mix it with the cooking juices for extra flavor. Stir in the remaining barbecue sauce and let it warm through for 10-15 minutes.

Step 7

To serve, scoop the pulled chicken onto hamburger buns, top with coleslaw for a crunch if desired, and enjoy!
