Directions

Step 1

Finely chop 200 grams of the dark chocolate and place it in a heatproof bowl. Reserve the remaining 100 grams of chocolate for later.

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Pour the hot cream over the chopped chocolate and let it sit undisturbed for 5 minutes to allow the chocolate to melt.
