Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 tablespoons granulated sugar
  • 2 celery stalks (finely diced)
  • 0.5 small red onion (finely diced)
  • 0.5 cup shredded carrots
  • 0.5 green bell pepper (finely diced)
  • 2 hard-boiled eggs (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika (for garnish)

Directions

Step 1

Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse with cold water to cool the pasta and remove excess starch. Set aside.

Step 2

In a large mixing bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and granulated sugar until smooth and well combined.

Step 3

Add the diced celery, red onion, shredded carrots, green bell pepper, and chopped hard-boiled eggs to the bowl. Stir to evenly coat the vegetables with the dressing.

Step 4

Fold the cooled macaroni into the mixture, making sure all the pasta is well coated with the dressing.

Step 5

Season with salt and black pepper to taste. Adjust the tanginess or sweetness by adding a little more vinegar or sugar, if desired.

Step 6

Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld.

Step 7

Before serving, lightly stir the salad to re-distribute the dressing. Sprinkle with paprika for garnish and serve cold.
