  • 3 cups Fresh corn kernels (about 4 ears of corn)

  • 1.5 cups Heavy cream
  • 0.5 cups Milk
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 1 tablespoon Unsalted butter (for greasing)
  • 2 tablespoons Chopped fresh chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Grease a 2-quart baking dish or six individual ramekins with the unsalted butter and set aside.

Step 3

Place 2 cups of the corn kernels in a blender. Add the heavy cream, milk, eggs, sugar, salt, pepper, and nutmeg. Blend until smooth, about 30-45 seconds.
