Ingredients

  • 2 pounds Ground beef
  • 1 cup (finely diced) Yellow onion
  • 1 cup Ketchup
  • 0.25 cup Yellow mustard
  • 2 tablespoons Brown sugar
  • 1 tablespoon Apple cider vinegar
  • 2 tablespoons Chili powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 cup Water
  • 8 pieces Hot dogs
  • 8 pieces Hot dog buns
  • 2 cups Coleslaw (optional, for topping)

Directions

Step 1

In a large skillet or Dutch oven, cook the ground beef over medium heat until browned. Use a wooden spoon to break it into small crumbles as it cooks. Discard any excess grease.

Step 2

Add the finely diced yellow onion to the skillet with the beef and cook for 3-5 minutes, until the onion is softened and translucent.

Step 3

Stir in the ketchup, yellow mustard, brown sugar, apple cider vinegar, chili powder, smoked paprika, garlic powder, salt, and ground black pepper. Mix until all the seasonings are evenly distributed.

Step 4

Pour in the water and bring the mixture to a gentle simmer. Reduce the heat to low and cook for 20 minutes, stirring occasionally, until the chili is thickened and flavorful.

Step 5

While the chili simmers, grill or boil the hot dogs until heated through, according to package instructions. Toast the hot dog buns if desired.

Step 6

To assemble, place a hot dog in each bun, spoon a generous amount of chili over the top, and add a scoop of coleslaw if desired for a classic Carolina-style touch.

Step 7

If freezing for OAMC, allow the chili to cool completely. Portion into airtight freezer-safe containers or resealable bags. Label with the date and freeze for up to 3 months.

Step 8

To serve from frozen, thaw the chili overnight in the refrigerator and reheat on the stovetop or in the microwave until heated through. Assemble the chili dogs as directed.
