  • 4 pieces boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups long-grain white rice
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups sharp cheddar cheese
  • 1 can (10.5 ounces) cream of chicken soup
  • 6 strips cooked bacon, crumbled
  • 3 stalks green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with cooking spray and set aside.

Step 2

In a large pot, combine the chicken breasts and chicken broth. Bring to a boil, then lower the heat and simmer for 15–20 minutes, or until the chicken is fully cooked. Remove the chicken from the broth and set it aside to cool, reserving 2 cups of the cooking broth.

Shred the chicken using two forks or your hands, and set it aside for later.

Step 4

Using the same pot, add the 2 cups of reserved chicken broth and rice. Bring to a boil, then lower the heat and simmer, covered, for about 15 minutes or until the rice is tender and the liquid is absorbed. Set the rice aside.

In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute, stirring constantly, to form a roux. Gradually whisk in the milk until the mixture is smooth and thickened, about 3 minutes.

Stir in 1 1/2 cups of the cheddar cheese, the cream of chicken soup, garlic powder, onion powder, paprika, salt, and black pepper. Continue stirring until the cheese sauce is smooth and creamy. Remove from heat.

In a large mixing bowl, combine the cooked rice, shredded chicken, and cheese sauce. Mix until everything is evenly coated.

Transfer the mixture into the prepared casserole dish and spread it out evenly. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.

Bake in the preheated oven for 25–30 minutes, or until the casserole is bubbly and the top is golden brown.
