Ingredients

  • 1 pound Ground lamb or beef
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 2 medium Carrot, diced
  • 2 medium Celery stalk, diced
  • 3 Garlic cloves, minced
  • 2 tablespoons Tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 cup Beef or chicken stock
  • 1 cup Frozen peas
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 large Russet potatoes, peeled and cubed
  • 4 tablespoons Butter
  • 0.5 cup Milk or heavy cream
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat.

Step 3

Add the diced onion, carrots, celery, and garlic to the skillet. Sauté for 5-7 minutes until softened.

Step 4

Add the ground lamb or beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-6 minutes.

Step 5

Stir in the tomato paste and Worcestershire sauce, mixing well to coat the meat and vegetables.

Step 6

Pour in the beef or chicken stock and stir to combine. Simmer for 8-10 minutes until the mixture thickens slightly.

Step 7

Add the frozen peas, salt, and black pepper to the meat mixture. Taste and adjust seasoning if needed. Remove from heat.

Step 8

Meanwhile, boil the cubed potatoes in a large pot of salted water until fork-tender, about 15 minutes.

Step 9

Drain the potatoes and return them to the pot. Add butter and milk (or heavy cream) to the potatoes and mash until smooth. Stir in grated Parmesan cheese (if using).

Step 10

Spread the meat mixture evenly into the bottom of a 9x13 baking dish.

Step 11

Spread the mashed potatoes over the meat filling, smoothing the top with a spatula. Use a fork to create decorative ridges if desired.

Step 12

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top of the mashed potatoes is golden and crispy.

Step 13

Let the Shepherd's Pie cool for 5 minutes before serving. Enjoy your hearty meal!
