Ingredients

  • 1 cup rolled oats
  • 1 cup plain flour
  • 0.75 cup brown sugar
  • 0.75 cup desiccated coconut
  • 125 grams unsalted butter
  • 2 tablespoons golden syrup
  • 2 tablespoons water
  • 1 teaspoon baking soda

Directions

Step 1

Preheat your oven to 160°C (320°F) and line two baking trays with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, plain flour, brown sugar, and desiccated coconut. Mix well to ensure even distribution.

Step 3

In a small saucepan over low heat, melt the unsalted butter and golden syrup together, stirring occasionally until smooth.

Step 4

In a separate small bowl, combine the water and baking soda. Stir to dissolve, then immediately add this mixture to the melted butter and golden syrup in the saucepan. The mixture will foam slightly; stir gently to combine.

Step 5

Pour the wet mixture into the bowl with the dry ingredients. Stir with a wooden spoon until fully combined and a sticky dough forms.

Step 6

Roll tablespoon-sized portions of the dough into balls and place them onto the prepared baking trays, leaving about 5 cm (2 inches) of space between each ball to allow for spreading.

Step 7

Gently flatten each ball slightly with the back of a fork or your hand.

Step 8

Bake the biscuits in the preheated oven for 12-15 minutes, or until they turn golden brown. Keep an eye on them, as they can brown quickly towards the end.

Step 9

Remove the trays from the oven and let the biscuits cool on the trays for 5 minutes to firm up before transferring them to a wire rack to cool completely.

Step 10

Store the cooled Anzac Biscuits in an airtight container at room temperature for up to 7 days. Enjoy with a cup of tea or coffee!
