Ingredients

  • 1 lb Ground beef
  • 1 cup Breadcrumbs
  • 1 large Egg
  • 0.25 cup Milk
  • 0.5 cup (finely chopped) Onion
  • 1 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Vegetable oil
  • 1 cup Pineapple juice
  • 0.75 cup Brown sugar
  • 0.5 cup Rice vinegar
  • 0.5 cup Ketchup
  • 2 tbsp Soy sauce
  • 2 tbsp Cornstarch
  • 3 tbsp Water
  • 1 medium (cut into chunks) Bell pepper
  • 1 cup Pineapple chunks

Directions

Step 1

In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, and black pepper. Mix until well combined.

Step 2

Shape the mixture into small, evenly sized meatballs, about 1 inch in diameter.

Step 3

Heat vegetable oil in a large skillet over medium heat. Add the meatballs in batches (do not overcrowd) and cook until browned on all sides, about 5-7 minutes. Remove meatballs from the skillet and set aside.

Step 4

In a medium bowl, whisk together pineapple juice, brown sugar, rice vinegar, ketchup, and soy sauce until smooth.

Step 5

In a small bowl, mix cornstarch and water to create a slurry. Set aside.

Step 6

In the same skillet over medium heat, pour in the prepared sweet and sour sauce. Bring to a gentle simmer.

Step 7

Add the cornstarch slurry to the sauce and stir constantly until it thickens, about 2-3 minutes.

Step 8

Add the browned meatballs back into the skillet along with the bell pepper chunks and pineapple chunks. Stir to coat everything in the sauce.

Step 9

Cover and simmer on medium-low heat for 10-15 minutes, allowing the flavors to meld and the meatballs to cook through.

Step 10

Serve hot over steamed rice or noodles. Enjoy!
