Ingredients

  • 1.5 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoons Ground cinnamon
  • 1.25 cups Whole milk
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Unsalted butter (melted)
  • 0 Cooking oil or additional butter (for greasing)

Directions

Step 1

In a large mixing bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon until well combined.

Step 2

In a separate bowl, whisk the milk, egg, vanilla extract, and melted butter until smooth.

Step 3

Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring gently with a whisk or spatula. Mix until just combined, being careful not to overmix. The batter should be slightly lumpy.

Step 4

Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with a small amount of cooking oil or butter.

Step 5

For each pancake, scoop about 1/4 cup of batter onto the skillet. Use the back of a spoon to gently spread the batter into a circle, if necessary.

Step 6

Cook until bubbles appear on the surface of the pancake and the edges look set, about 2-3 minutes. Flip the pancake and cook for an additional 2-3 minutes, or until golden brown on both sides.

Step 7

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 8

Serve your pancakes warm with your favorite toppings, such as syrup, fresh fruit, or whipped cream.
