Ingredients

  • 400 grams pasta (penne or spaghetti)
  • 3 tablespoons olive oil
  • 4 garlic cloves
  • 1 teaspoon crushed red pepper flakes
  • 800 grams canned crushed tomatoes
  • 2 teaspoons dried oregano
  • 10 fresh basil leaves
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 50 grams grated Parmesan cheese
  • 4 liters water

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add a generous pinch of salt to the water.

Step 2

Cook the pasta according to the package instructions, until al dente. Reserve 1 cup of pasta cooking water before draining, then set the pasta aside.

Step 3

While the pasta is cooking, heat 3 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Peel and finely slice the garlic cloves. Add the garlic to the skillet and sauté for 1-2 minutes or until fragrant, being careful not to burn it.

Step 5

Add the crushed red pepper flakes and sauté for an additional 30 seconds to release the flavors.

Step 6

Pour in the canned crushed tomatoes and stir to combine. Add the dried oregano, salt, and black pepper. Let the sauce simmer over low heat for 15-20 minutes, stirring occasionally.

Step 7

Tear the fresh basil leaves into small pieces and stir them into the sauce during the last 5 minutes of cooking.

Step 8

Taste the sauce and adjust seasoning with additional salt or pepper if needed.

Step 9

Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water a little at a time if the sauce is too thick.

Step 10

Serve hot, topped with grated Parmesan cheese and a drizzle of olive oil if desired.
