Ingredients

  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1.5 cups cherry tomatoes
  • 3 cups spinach
  • 1 cup heavy cream
  • 0.5 cups parmesan cheese
  • 12 ounces penne pasta
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes
  • 0.25 cup basil leaves

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, season the chicken breasts with salt and black pepper on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside to rest.

Step 4

In the same skillet, add the remaining tablespoon of olive oil along with the minced garlic. Sauté for 1-2 minutes until fragrant.
