Ingredients

  • 4 pounds beef brisket
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 0.5 cups red wine (optional)
  • 2 bay leaves

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Trim any excess fat from the beef brisket, leaving a thin layer for flavor. Pat the brisket dry with paper towels.

Step 3

In a small bowl, mix the kosher salt, black pepper, garlic powder, smoked paprika, and brown sugar. Rub this spice blend evenly over both sides of the brisket.

Step 4

Heat the olive oil in a large oven-safe pan or Dutch oven over medium-high heat. Sear the brisket on both sides for about 3-4 minutes per side until browned. Remove the brisket from the pan and set aside.

Step 5

In the same pan, add the sliced onions and cook for 5 minutes, stirring occasionally, until softened.

Step 6

Stir in the beef broth, tomato paste, Worcestershire sauce, and red wine (if using). Bring the mixture to a simmer, scraping the bottom of the pan to deglaze any browned bits.

Step 7

Return the brisket to the pan, placing it fat-side up. Add the bay leaves and ensure the liquid covers about two-thirds of the meat. If needed, add more beef broth or water.

Step 8

Cover the pan with a tight-fitting lid or aluminum foil and place it in the preheated oven.

Step 9

Cook the brisket for 4 hours, checking halfway through to ensure the liquid hasn't evaporated. If it's low, add more broth.

Step 10

Once done, remove the pan from the oven and transfer the brisket to a cutting board. Let it rest for 15 minutes before slicing against the grain.

Step 11

Serve the brisket with the cooked onions and sauce. Pair with mashed potatoes, roasted vegetables, or crusty bread for a complete meal.
