Ingredients

  • 1 cup Pitted dates
  • 1 cup Raw almonds
  • 3 tablespoons Carob powder
  • 1 tablespoon Fresh orange zest
  • 2 tablespoons Fresh orange juice
  • 1 teaspoon Vanilla extract
  • 1 cup Unsweetened shredded coconut

Directions

Step 1

In a food processor, combine the pitted dates and raw almonds. Blend until the mixture is finely ground and begins to clump together.

Step 2

Add the carob powder, fresh orange zest, orange juice, and vanilla extract to the food processor. Blend until the mixture is fully combined and forms a cohesive, sticky dough.

Step 3

Using clean hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat with the rest of the dough until you’ve formed about 12 balls.

Step 4

Place the unsweetened shredded coconut into a shallow dish or plate. Roll each ball in the shredded coconut until fully coated.
